Exciting opportunity! Country Manor is looking to add a Director of Culinary Operations to their team! The ideal incumbent of this role will be excited by the ability to regularly use their creativity, and extensive culinary skills to develop new, delectable dining options, scrumptious snacks, and palatable party spreads. An enthusiasm for ensuring quality food, service, and efficiency is paramount to this position.

As the Director of Culinary Operations, you will work alongside our Management team, all of whom are there to support one another in Country Manor's mission of ‘enriching the lives for the individuals and families we serve now and for generations to come!' Our management team has impressive longevity, with well over 200 collective years of experience at Country Manor.

Director of Culinary Operations Responsibilities:

  • Oversight of staff orientation/onboarding and mentoring
  • Supervise the preparation, serving, and clean-up of all meals (nursing facility, assisted living, senior housing, daycare, staff) according to the menus
  • Plan menus per regulations for all entities
  • Plan daily snacks and nourishments for all entities
  • Plan and oversee production and service delivery for special functions (funerals, open house, activity parties, etc.)
  • Assure that all functions of the Culinary Department are carried out as efficiently and economically as possible
  • Assure meals meet nutritional guidelines, are served at appropriate temperatures, and are visually appealing
  • Oversight of staff scheduling
  • Assure the availability of equipment and supplies necessary for meal preparation and clean-up
  • Oversee ordering of food in accordance with the menus. Monitor and evaluate vendors and pricing to ensure the highest quality at the lowest cost
  • Prepare menus in consultation with Registered Dietician and entity manager
  • Prepare and maintain a standardized set of recipes
  • Keep current knowledge of federal, state, and local regulations governing food service, including preparation, serving, and storage of food, cooking utensils, and equipment
  • Act as a liaison between the Culinary Department and other departments and customers
  • Attend weekly Department Head Meetings, monthly QIA Meetings, and other meetings as requested by Associate Administrator
  • Develop and maintain food service quality control procedures
  • Oversee resident/patient satisfaction
  • Complete performance evaluations of culinary staff at appropriate intervals
  • Other duties as assigned

Qualifications Required:

  • Graduate of an approved food service course or dietary manager course and a certified member of DMA (Dietary Manager Association) or a Registered Dietician. Preferred, but not required.
  • Experience in food preparation, food handling and storage, meal planning, nutrition, and sanitation
  • Experience in supervision of employees
  • Experience in long-term care and knowledge of state and federal regulations governing long-term care facilities
  • Knowledge of infection control, food-borne illnesses, OSHA guidelines, etc.
  • Computer knoweledge and skills
  • Ability to function as a team member
  • Problem-solving and decision-making capabilitites
  • Adaptability and flexibility to organize and prioritize department needs
  • Excellent time management skills
  • Ability to display tact and patience when dealing with residents/staff
  • Ability to meet mental and physical health requirements
